Our Story
“People often ask us how we can work together, live together, play together? After 10 years and many adventures, we know the answer lies in our passion for excitement, hard work, family and friends and of course- good food.”
Both local to the area, we attended Ullapool High School (although a few years apart).
Sam worked as a Chef in some prestigious restaurants in Vancouver, before returning to Scotland to work at Inverlochy Castle in Fort William. Rachael studied HR and languages at Stirling University before meeting Sam in 2009. ‘He would drive through to Stirling late after work and we would plan our escape to the Alps’. It was not long before that moment came and we headed for the Mountains.
Sam had a great passion for bikes and skiing and it didn’t take long for me to become obsessed too. Sam was never too keen on baking and desserts so I learned to master these so that we could run the kitchen together.
We managed Luxury Chalets in the French Alps (Skiing in Winter, Biking in Summer) for many years before heading off to the beautiful South Island of New Zealand to work in the gorgeous Hapuku Lodge for 2 years. Here, we really learned to embrace local produce and community. We often joked that Kaikoura was similar to our home village (except for the weather perhaps…)
As thrilling as it was, we soon became tired of living out of a suitcase and we finally agreed that we pined for home- we missed our friends and families.
We ran Glencanisp Lodge near Lochinver whilst we kept our fingers on the pulse waiting for a guest house or restaurant to become available locally.
We put offers down on several different venues and finally, after it being on the market for 3 years already- put an offer on the former Assynt Visitor Centre (now Delilah’s Restaurant & Bar).
Our restaurant and bar is named after our gorgeous, 3 year old daughter- Delilah.
Our dream was always to have a restaurant that reflects us. We strive for sustainability whilst showcasing the best local produce, all in a space that makes everyone (even dogs!) feel welcome.
